- 1 pound ground beef
- 1 can chili beans, drained
- 1 bell pepper, chopped
- 1 small onion, chopped
- 2 cups shredded cheddar cheese
- 1 can enchilada sauce (about 10 oz)
- 10 corn tortillas
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Cook ground beef in a skillet over medium heat until browned; drain excess fat.
- Add chopped bell pepper and onion; cook until softened, about 3-5 minutes.
- Mix in drained chili beans and heat through.
- Layer corn tortillas at the bottom of the baking dish.
- Spread half of the beef mixture over the tortillas and sprinkle with 1 cup cheddar cheese. Pour half of the enchilada sauce over.
- Repeat layering with another set of tortillas, remaining beef mixture, remaining cheese, and enchilada sauce.
- Cover with foil and bake for 25 minutes; uncover and bake an additional 10-15 minutes until cheese is golden.
- Let cool slightly before serving, garnished with cilantro or sour cream.
Notes
Check the center of the dish to ensure it is heated through before removing from the oven.
