Description

This dish features layers of savory ground beef, hearty beans, and gooey cheese, all smothered in a zesty enchilada sauce.


Ingredients

  • 1 pound ground beef
  • 1 can chili beans, drained
  • 1 bell pepper, chopped
  • 1 small onion, chopped
  • 2 cups shredded cheddar cheese
  • 1 can enchilada sauce (about 10 oz)
  • 10 corn tortillas

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook ground beef in a skillet over medium heat until browned; drain excess fat.
  3. Add chopped bell pepper and onion; cook until softened, about 3-5 minutes.
  4. Mix in drained chili beans and heat through.
  5. Layer corn tortillas at the bottom of the baking dish.
  6. Spread half of the beef mixture over the tortillas and sprinkle with 1 cup cheddar cheese. Pour half of the enchilada sauce over.
  7. Repeat layering with another set of tortillas, remaining beef mixture, remaining cheese, and enchilada sauce.
  8. Cover with foil and bake for 25 minutes; uncover and bake an additional 10-15 minutes until cheese is golden.
  9. Let cool slightly before serving, garnished with cilantro or sour cream.

Notes

Check the center of the dish to ensure it is heated through before removing from the oven.
