- 1 tablespoon olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 sprigs fresh rosemary
- 1 tablespoon fresh parsley, chopped
Instructions
- Start by patting your lamb chops dry with a paper towel. This small step is crucial since moisture can interfere with a good sear. Once dried, season both sides of each chop generously with salt and black pepper. Allow them to sit at room temperature for about 15–20 minutes.
- In your cast-iron skillet, heat olive oil over medium-high heat. As the oil begins to shimmer, it’s a sign it’s hot enough to add the lamb chops. Carefully place the chops in the skillet, making sure not to overcrowd the pan. Sear for about 3–4 minutes on each side until a beautiful golden crust forms.
- Once both sides of the lamb chops are seared to perfection, reduce the heat to medium-low. Add the unsalted butter to the skillet and let it melt. Stir in the minced garlic and the rosemary sprigs, and continuously baste the lamb chops with the garlic butter for 1–2 minutes.
- After basting, remove the skillet from the heat and transfer the lamb chops to a plate. Spoon any remaining garlic butter over the chops and let them rest for about 5 minutes to ensure every bite is tender and juicy.
Notes
Ensure your skillet is preheated enough to achieve that nice crust on the lamb, and use a meat thermometer to check the internal temperature: 125°F for medium-rare and 145°F for medium.
