- 2 small-sized chicken breasts
- 1 loaf of Italian bread
- 2 tbsp of seasoning mix (or a combo of salt, garlic powder, and black pepper)
- 1 1/2 sticks unsalted butter
- 2 tbsp of garlic paste (or finely chopped garlic)
- 2 tbsp fresh parsley, chopped small
- 1 tsp red pepper flakes, crushed
- 2 tbsp extra virgin olive oil
- 1/4 cup parmesan cheese, shredded
- 1/2 cup shredded mozzarella cheese
- 1/2 cup heavy cream (full-fat)
Instructions
- Start by dicing the chicken breasts into bite-sized chunks, approximately half an inch thick. In a medium bowl, toss the chicken pieces with a tablespoon of olive oil and your seasoning mix. Heat a skillet over medium heat and add your seasoned chicken, cooking until golden brown on all sides, which typically takes 7-10 minutes.
- While the chicken is cooking, slice the Italian bread in half lengthwise. In a small bowl, combine one melted stick of butter with the crushed red pepper flakes, garlic, and a spoonful of chopped parsley. Evenly spread this garlic butter mixture on the cut side of the bread. Now, place the bread in your preheated oven and toast for about 5-10 minutes or until it’s golden.
- After your chicken is cooked, remove it from the pan and set it aside while keeping the pan on the low-medium heat. Add half a stick of butter to the pan and let it melt. Stir in a tablespoon of garlic and sauté for approximately two minutes until fragrant. Next, pour in the heavy cream, followed by parsley and shredded parmesan cheese. Stir this combination until the sauce thickens, typically 3-5 minutes.
- Once your sauce is prepared, take the toasted bread and generously coat it with half of the creamy mixture. Then, place the sautéed chicken pieces on top and sprinkle with shredded mozzarella cheese. Drizzle the remaining Alfredo sauce over everything. Return the assembled bread to the oven for another 5 minutes or until the cheese is bubbling and slightly golden.
Notes
Ensure chicken is cooked to an internal temperature of 165°F to avoid foodborne illness. For a low-calorie version, consider using reduced-fat cheeses and less butter.
