There’s something incredibly satisfying about a wholesome meal that brings vibrant flavors together in this Greek Chicken Bowl.


Ingredients

  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt, to taste
  • Pepper, to taste
  • 1 apple, cored and sliced
  • 1 cup roasted sweet potatoes or butternut squash
  • 1 tbsp olive oil
  • 1 tsp cinnamon or smoked paprika (optional)
  • Salt, to taste
  • 1 cup cooked quinoa or rice
  • ¼ cup crumbled feta cheese
  • 2 tbsp chopped toasted pecans
  • 12 cups baby spinach or mixed greens
  • 12 tbsp balsamic glaze or dressing

Instructions

  1. To start, preheat your oven to 400°F (200°C). Rub the chicken breasts with olive oil and season with oregano, salt, and pepper.
  2. Cook the chicken in a skillet for about 5–6 minutes on each side, until fully cooked. Let it rest before slicing.
  3. Toss apple slices and sweet potatoes with olive oil, cinnamon, and salt.
  4. Roast the mixture in the oven for about 15–20 minutes until tender.
  5. In a bowl, layer quinoa or rice, then fresh greens, followed by the roasted mixture and sliced chicken. Top with feta and pecans.
  6. Drizzle with balsamic glaze before serving.

Notes

You can use grilled shrimp, tofu, or chickpeas instead of chicken for variations.
