- 2 chicken breasts
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt, to taste
- Pepper, to taste
- 1 apple, cored and sliced
- 1 cup roasted sweet potatoes or butternut squash
- 1 tbsp olive oil
- 1 tsp cinnamon or smoked paprika (optional)

- 1 cup cooked quinoa or rice
- ¼ cup crumbled feta cheese
- 2 tbsp chopped toasted pecans
- 1–2 cups baby spinach or mixed greens
- 1–2 tbsp balsamic glaze or dressing
Instructions
- To start, preheat your oven to 400°F (200°C). Rub the chicken breasts with olive oil and season with oregano, salt, and pepper.
- Cook the chicken in a skillet for about 5–6 minutes on each side, until fully cooked. Let it rest before slicing.
- Toss apple slices and sweet potatoes with olive oil, cinnamon, and salt.
- Roast the mixture in the oven for about 15–20 minutes until tender.
- In a bowl, layer quinoa or rice, then fresh greens, followed by the roasted mixture and sliced chicken. Top with feta and pecans.
- Drizzle with balsamic glaze before serving.
Notes
You can use grilled shrimp, tofu, or chickpeas instead of chicken for variations.
