Description

Ingredients

  • 1 sheet puff pastry, thawed
  • 2 tbsp olive oil
  • 10 oz cremini mushrooms, sliced
  • ¾ cup finely grated Parmesan
  • ½ cup grated Gruyère cheese
  • 2 tbsp unsalted butter
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves (or ½ tsp dried)
  • 8 oz cream cheese
  • ¼ cup dry white wine (optional)
  • Salt and black pepper, to taste
  • 1 tsp Dijon mustard (optional)
  • 2 large eggs, divided
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet, heat olive oil and butter; sauté onion for 5 minutes. Add garlic and mushrooms, cook for 8 minutes.
  3. Add thyme, salt, pepper, and wine. Allow liquid to reduce completely.
  4. Add cream cheese and Parmesan. Mix until smooth and fold in Gruyère and a beaten egg.
  5. Prepare pastry: cut strips along edges and spread filling in the center. Braid strips over filling.
  6. Transfer to baking tray, brush with beaten egg, and bake for 20-22 minutes.
  7. Cool for 10 minutes, garnish with parsley, and serve.
