- 1 pound of thinly sliced beef (like ribeye or sirloin)
- 1 medium onion, sliced
- 1 cup of bell peppers, sliced (any color)
- 8 ounces of provolone cheese, sliced
- 4 large flour tortillas
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Heat a tablespoon of olive oil in a large skillet over medium heat. Sauté onions and bell peppers for 5-7 minutes. Add minced garlic and cook for 1-2 more minutes. Set aside.
- In the same skillet, add another tablespoon of olive oil. Cook the beef on medium-high heat for 3-5 minutes. Season with salt and pepper. Mix with the vegetables.
- Laying a tortilla flat, place some beef-vegetable mixture in the center. Top with provolone cheese and roll up tightly. Repeat for remaining tortillas.
- Wipe skillet clean and cook roll-ups on medium heat for 2-3 minutes on each side until crispy and cheese melts.
Notes
Rest the roll-ups for a minute after removing from heat for best texture. Avoid overstuffing tortillas as they might burst.
