  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying

Instructions

  1. Begin by heating about 2 inches of vegetable oil in a deep skillet over medium-high heat. Attach your thermometer and wait until the oil reaches a sizzling 350°F (175°C) for optimal frying conditions.
  2. Set up your dredging station: in one bowl, mix the all-purpose flour with garlic powder, paprika, salt, and black pepper. Beat the eggs in a second bowl. Place the crushed potato chips in a third bowl.
  3. Working in batches, dredge each chicken piece in the seasoned flour, shake off excess, dip into beaten eggs, then press firmly into crushed potato chips to coat thoroughly.
  4. Carefully place coated chicken nuggets into the hot oil, frying in batches, 3-4 minutes each, until golden brown and cooked through.
