- 2 large eggs, beaten

- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil, for frying
Instructions
- Begin by heating about 2 inches of vegetable oil in a deep skillet over medium-high heat. Attach your thermometer and wait until the oil reaches a sizzling 350°F (175°C) for optimal frying conditions.
- Set up your dredging station: in one bowl, mix the all-purpose flour with garlic powder, paprika, salt, and black pepper. Beat the eggs in a second bowl. Place the crushed potato chips in a third bowl.
- Working in batches, dredge each chicken piece in the seasoned flour, shake off excess, dip into beaten eggs, then press firmly into crushed potato chips to coat thoroughly.
- Carefully place coated chicken nuggets into the hot oil, frying in batches, 3-4 minutes each, until golden brown and cooked through.
- Use a slotted spoon to transfer fried nuggets to a wire rack over a baking sheet. Allow to drain and rest for a couple of minutes. Serve hot.
