Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp brown sugar
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked macaroni
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup whole milk
  • 6 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Begin by heating the olive oil in a large skillet over medium heat. Once hot, add the chopped onion and minced garlic, sautéing for about 2–3 minutes until the onion becomes translucent and fragrant.
  2. Next, add the ground beef to the skillet. Cook, breaking it apart with a spatula, until the meat is nicely browned. Be sure to drain excess fat if necessary.
  3. Add ketchup, tomato paste, Worcestershire sauce, brown sugar, smoked paprika, salt, and pepper to the skillet. Stir to combine and let simmer for about 5–7 minutes.
  4. In a separate saucepan, add the cooked macaroni, whole milk, and shredded cheddar cheese. Heat over low, stirring continuously until the cheese melts.
  5. Once both components are ready, place each tortilla flat. Scoop a generous amount of the mac and cheese and a scoop of the sloppy joe filling in the center, then roll tightly.
  6. Heat a grill or skillet, adding a bit of butter or oil. Place the wraps seam-side down and grill until golden brown, about 3–4 minutes on each side.
  7. Serve hot, slicing them in half if desired.
