- Start by making your delicious peanut dressing. In a medium-sized bowl, combine the creamy natural peanut butter with brown sugar or honey to add sweetness. Then, pour in the low-sodium soy sauce, rice vinegar, minced garlic, ginger, and sriracha. Use a whisk to mix these ingredients until you achieve a smooth, uniform consistency. Depending on your preferred thickness, gradually add water while mixing until the dressing is pourable but still creamy.
- In a large mixing bowl, combine the chopped cooked chicken breast, coleslaw mix, grated carrots, fresh cilantro, and chopped roasted peanuts.
