- ½ cup dried green lentils
- 1 cup diced zucchini
- 1 small onion, finely chopped
- 1 carrot, diced
- 1 celery stalk, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt, to taste
- Freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse lentils under cold water using a colander and let drain.
- In a pot, heat olive oil over medium heat, add onion and sauté until translucent, then add garlic, carrot, and celery, and sauté until softened.
- Add zucchini, stirring and cooking until slightly softened.
- Add lentils, broth, oregano, and thyme. Stir and bring to a boil.
- Reduce heat to simmer, cover, and cook for 25-30 minutes, seasoning to taste with salt and pepper.
- Garnish with parsley before serving.
Notes
For thicker soup, reduce broth to 3 cups. Adjust consistency with additional broth or water if needed.
