Ingredients

  • ½ cup dried green lentils
  • 1 cup diced zucchini
  • 1 small onion, finely chopped
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse lentils under cold water using a colander and let drain.
  2. In a pot, heat olive oil over medium heat, add onion and sauté until translucent, then add garlic, carrot, and celery, and sauté until softened.
  3. Add zucchini, stirring and cooking until slightly softened.
  4. Add lentils, broth, oregano, and thyme. Stir and bring to a boil.
  5. Reduce heat to simmer, cover, and cook for 25-30 minutes, seasoning to taste with salt and pepper.
  6. Garnish with parsley before serving.

Notes

For thicker soup, reduce broth to 3 cups. Adjust consistency with additional broth or water if needed.
