- 4 cups cubed butternut squash
- 1 red onion, halved and sliced
- 1 (16 oz) package shelf-stable gnocchi
- 2 tbsp extra-virgin olive oil
- 1 tbsp fresh thyme leaves
- 1 tbsp chopped fresh sage (optional)
- 1 tsp garlic powder
- 1 tsp kosher salt
- Freshly ground black pepper, to taste
- 4 uncooked spicy Italian sausages (chicken or pork)
- 4 oz crumbled feta or goat cheese
- 2–3 tbsp hot honey, plus more if desired
- 1 tbsp fresh thyme leaves
- Lemon zest, for garnish
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the cubed squash, sliced onion, and gnocchi. Drizzle with oil, sprinkle with thyme, sage, garlic powder, salt, and pepper, and toss to coat.
- Remove the sausage casing and break the sausage meat into pieces. Scatter over the mixture.
- Roast for 25 minutes, stirring halfway, until the gnocchi is crispy and vegetables are tender.
- Add cheese and roast an additional 5 minutes. Drizzle with hot honey and garnish with thyme and lemon zest before serving.

Adjust spice levels according to preference and experiment with seasonal vegetables.
