These Shrimp and Crab Nacho Biscuit Melts offer a delightful combination of seafood and gooey cheese wrapped in flaky biscuits, perfect for any gathering.

Ingredients

Scale
  • 1 can (16.3 ounces) refrigerated flaky biscuits, 8 count
  • 12 ounces medium shrimp, peeled, deveined, chopped
  • 8 ounces lump crab meat, well drained and picked over
  • 1 tablespoon olive oil (for sautéing shrimp)
  • 2 cloves garlic, finely minced
  • 1 1/2 teaspoons Old Bay seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 ounces cream cheese, softened
  • 1/3 cup mayonnaise
  • 1 tablespoon fresh lime juice
  • 3 green onions, thinly sliced
  • 1/2 cup finely diced red bell pepper
  • 1 small jalapeño, finely minced, seeds to taste
  • 1 1/2 cups finely shredded mozzarella cheese, divided
  • 1 cup finely shredded sharp cheddar cheese, divided
  • 1 cup lightly crushed tortilla chips
  • 2 tablespoons unsalted butter, melted (for brushing biscuits)
  • 1 cup small diced tomatoes (for topping)
  • 2 tablespoons chopped fresh cilantro (for topping)

Instructions

  1. Start by preheating your oven to 400°F (200°C) and preparing your sheet pan with parchment paper. This will help ensure that your biscuit melts are easy to remove after they’re baked. Begin warming a skillet over medium-high heat while you prepare the shrimp. Once the skillet is hot, add the olive oil, allowing it to heat slightly before introducing the chopped shrimp. Sauté the shrimp for about 2 to 3 minutes, or until they turn just opaque. Be careful not to overcook them! Stir in the finely minced garlic and Old Bay seasoning, cooking for an additional 30 seconds to release their flavors. Once done, transfer the mixture to a plate to cool.
  2. In a large mixing bowl, combine the softened cream cheese, mayonnaise, and fresh lime juice. Mix until you achieve a smooth consistency, ensuring an even incorporation of flavors. Next, fold in the green onions, diced red bell pepper, and minced jalapeño for a flavorful kick. Now, gently incorporate the cooled shrimp and lump crab meat into the mixture, being careful not to break apart the crab too much. Follow this by adding 1 cup of the mozzarella cheese, 1/2 cup of the cheddar cheese, and the crushed tortilla chips. The tortilla chips provide a delightful crunch that pairs beautifully with the creamy ingredients.
  3. Arrange the refrigerated biscuits on the prepared sheet pan, giving them some space since they will puff up while baking. Brush the tops of each biscuit lightly with melted butter to encourage a golden crust. Par-bake the biscuits in the oven for about 8 minutes, just until they’re puffy and slightly set. Remove them from the oven and gently press each biscuit down to flatten slightly while they’re still warm. This step creates a stable base for the seafood topping. Generously spoon the seafood mixture over each biscuit, ensuring an even distribution. To finish, sprinkle the remaining mozzarella and cheddar cheese on top. Return the tray to the oven and bake for an additional 10 to 14 minutes, or until the cheese is melted, bubbling, and the biscuit edges are a deep golden color. Once baked, let the melts rest for about 3 minutes before adding the fresh toppings.

Notes

Use fresh seafood whenever possible for the best flavor and texture in your melts. These melts can be made ahead of time; simply prepare the seafood mixture in advance and assemble the biscuits just before baking.
