  • 12 medium shrimp, peeled and deveined
  • 4 oz cream cheese, softened
  • ½ cup shredded cheddar cheese
  • 2 tbsp chopped green onions

  • ½ cup panko or breadcrumbs (optional topping)
  • 1 tbsp olive oil

Instructions

  1. Begin by preheating your oven to 400°F (200°C). Slice each jalapeño lengthwise and carefully remove the seeds to reduce the heat to your preferred level. Arrange the jalapeño halves cut-side up on a baking sheet lined with parchment paper. Drizzle the jalapeños lightly with olive oil to enhance their flavor and help in roasting. Pop them in the oven for 5 minutes to soften slightly, which allows for easier stuffing and an even cooking process.
  2. In a medium mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and chopped green onions. Add the garlic powder, along with salt and pepper to taste, and mix until you have a smooth and even blend. This creamy mixture will be the heart of your poppers, balancing the spice of the jalapeños and the sweetness of the shrimp.
  3. Using a small spoon, carefully fill each jalapeño half with the cheese mixture, making sure to pack it well for maximum flavor. Once all are filled, take your prepared shrimp and gently press one into the center of each stuffed jalapeño for a delightful seafood twist.
