- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- ¾ cup heavy whipping cream, cold
- 1 cup fresh or frozen raspberries
- 2 tablespoons sugar
- 1 teaspoon lemon juice
- 200 g dark chocolate, chopped
- 1 teaspoon coconut oil (optional, for shine)
Instructions
- Start by preparing the raspberry center by simmering raspberries, sugar, and lemon juice over medium-low heat until thickened.
- Beat cream cheese with powdered sugar and vanilla in a mixing bowl until smooth. Whip cold heavy cream and fold it into the cream cheese.
- Spoon cheesecake mixture into silicone dome molds, creating wells for raspberry mixture, then freeze.
- Melt dark chocolate and optionally stir in coconut oil for shine. Coat each dome with melted chocolate.
- Allow the chocolate coating to set and serve.
Notes
Ensure cream cheese is softened to prevent lumps. Use high-quality dark chocolate for best results. Allow adequate chilling time.
