  • 6 cups low-sodium beef broth
  • 1/3 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 6 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 ½ cups sliced mushrooms (shiitake or cremini)
  • 4 packs ramen noodles (discard seasoning)
  • ½ cup sliced scallions
  • 4 soft-boiled eggs, halved

Instructions

  1. Start by setting your slow cooker to low heat, or if you’re using the stovetop, preheat a large stock pot on medium heat. This ensures that your cooking vessel will be at the right temperature when you add your ingredients.
  2. In your slow cooker or stock pot, combine the beef chuck, low-sodium beef broth, soy sauce, hoisin sauce, rice vinegar, minced garlic, grated ginger, and sliced mushrooms. Stir everything together well to combine the flavors evenly. At this stage, the mixture will look unassuming, but don’t be fooled—the magic happens as it cooks!
  3. For an extra layer of flavor, consider searing the beef in a hot pan for a few minutes on all sides before adding it to the slow cooker. This optional step caramelizes the meat’s surface, bringing an additional depth of flavor to the dish that you’ll surely appreciate.
  4. Cover your slow cooker or pot and let everything cook. If using a slow cooker, let it simmer on low for about 8 hours, or for 4-5 hours if using the high setting. The beef is ready when it’s fork-tender and easy to shred. Once cooked, remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot, allowing it to soak in all the flavors.
  5. While your beef is cooking, prepare the ramen noodles separately according to the package instructions. To achieve the perfect soft-boiled eggs, boil them for about 6-7 minutes, then quickly transfer them to an ice bath to stop the cooking process. Peeling the eggs after cooling will leave you with perfect halves to garnish your ramen.
  6. Now, the fun part begins! In a bowl, place a serving of ramen noodles, top it generously with shredded beef, and ladle the warm, aromatic broth over everything. Add the mushrooms, sprinkle in sliced scallions, and finally, nestle the halved soft-boiled eggs on top. Serve immediately while everything is still warm!
