  • 3 cloves garlic, grated

  • ½ tsp dried oregano
  • ½ tsp flaky salt
  • 1012 small flour tortillas
  • 2 cups shredded cheddar or American cheese
  • Butter or oil for skillet
  • ½ cup mayo
  • 2 tbsp ketchup
  • 1 tbsp hot sauce
  • 1 tbsp pickle juice
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • Pinch cayenne

Instructions

  1. Begin by seasoning the ground beef with smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper. Ensure that the spices are evenly mixed into the meat for a consistent flavor throughout. Once seasoned, roll the mixture into 10–12 small meatballs.
  2. Heat a large skillet over medium-high heat and drizzle in a bit of butter or oil. Lay a flour tortilla flat in the skillet, and place one of your prepared meatballs in the center. Using a spatula, press firmly on the meatball to smash it down, allowing the beef to spread and cover the tortilla. Let it cook for about 2–3 minutes until the underside becomes golden brown. Carefully flip the melted tortilla so the beef side is down – while it cooks, add cheese on top to melt into the meat.
  3. In a bowl, whisk together the melted butter, grated garlic, chopped parsley, Dijon mustard, smoked paprika, cayenne, dried oregano, and flaky salt. Brush the cowboy butter on the cooked tortilla melts for enhanced flavor.
  4. Combine the mayo, ketchup, hot sauce, pickle juice, smoked paprika, garlic powder, and a pinch of cayenne in a mixing bowl. Whisk until smooth and creamy.
  5. Once all your melts are cooked, arrange them on a platter and customize with optional toppings. Serve with the spicy dipping sauce.

Notes

For the best flavor, let the beef marinate in the spices for 30 minutes before cooking. Use fresh tortillas for better texture.
