Ingredients

  • 1 ripe avocado, chopped
  • ¼ cup chopped fresh dill
  • 4 Persian cucumbers (or 1 English cucumber)
  • ¼ cup chopped pistachios
  • ¼ cup chopped fresh chives
  • ¼ cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 2 teaspoons honey
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Ensure cucumbers are washed and dried. Slice them lengthwise and smash using a flat knife. Cut into bite-sized pieces and add to a large bowl.
  2. Add chopped avocado, crumbled feta, pistachios, dill, and chives to the bowl.
  3. Whisk olive oil, lemon juice, Dijon mustard, and honey in a small bowl. Add minced garlic, salt, and pepper. Blend well.
  4. Pour dressing over salad and gently toss to coat evenly. Garnish with extra dill or chives. Serve immediately.
