- ¼ cup chopped fresh dill
- 4 Persian cucumbers (or 1 English cucumber)

- ¼ cup chopped fresh chives
- ¼ cup crumbled feta cheese
- 2 cloves garlic, minced
- 2 teaspoons honey
- 2–3 tablespoons extra virgin olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Instructions
- Ensure cucumbers are washed and dried. Slice them lengthwise and smash using a flat knife. Cut into bite-sized pieces and add to a large bowl.
- Add chopped avocado, crumbled feta, pistachios, dill, and chives to the bowl.
- Whisk olive oil, lemon juice, Dijon mustard, and honey in a small bowl. Add minced garlic, salt, and pepper. Blend well.
- Pour dressing over salad and gently toss to coat evenly. Garnish with extra dill or chives. Serve immediately.
