  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Start by combining the warm water (around 110°F) with the active dry yeast and granulated sugar in a mixing bowl. Allow this mixture to sit for about 5-10 minutes until it becomes frothy; this indicates that the yeast is active. Next, gradually add the all-purpose flour and salt to the bowl. Mix until a dough begins to form, then knead the dough on a floured surface for about 5-7 minutes until it is smooth and elastic. Transfer the dough to a lightly greased bowl, cover it with a clean towel, and let it rise in a warm place for approximately 1 hour or until it doubles in size.
  2. Once the dough has risen, punch it down to release the air. Divide the dough into eight equal pieces. Roll each piece into a long rope, about 18-20 inches long. Next, twist the ropes into the classic pretzel shape: take the ends of the rope and create a U shape, then cross the ends over each other and bring them down to the bottom of the U. Press the ends gently to secure the shape, being careful not to tear the dough.
  3. In a large pot, bring 10 cups of water to a boil. Once boiling, carefully mix in the baking soda—this will bubble up, so proceed cautiously. Add the pretzels to the boiling water (you can do this in batches if necessary) and boil for about 30 seconds on each side. Use a slotted spoon to remove them and place them on a baking sheet lined with parchment paper.
  4. Preheat your oven to 425°F (220°C). After boiling, brush the pretzels evenly with melted butter for that rich flavor. In a separate bowl, mix together the sugar and ground cinnamon, then sprinkle generously over the pretzels. Bake them in the preheated oven for 12-15 minutes, or until they are golden brown. Allow to cool for a few minutes before serving warm.
