Ingredients

  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 cups fresh peaches, peeled and diced (about 23 peaches)
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×5-inch loaf pan.
  2. In a large mixing bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract until combined.
  3. Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a separate bowl.
  4. Gradually add the dry mixture to the wet, stirring until just combined.
  5. Fold in the diced peaches and optional nuts until evenly combined.
  6. Pour the batter into the prepared loaf pan and bake for 55 to 65 minutes, checking for doneness with a toothpick.
  7. Allow to cool in the pan for 10 to 15 minutes before transferring to a wire rack to cool completely.
  8. Slice and serve warm or at room temperature.
