- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 2 cups fresh peaches, peeled and diced (about 2–3 peaches)
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9×5-inch loaf pan.
- In a large mixing bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract until combined.
- Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a separate bowl.
- Gradually add the dry mixture to the wet, stirring until just combined.
- Fold in the diced peaches and optional nuts until evenly combined.
- Pour the batter into the prepared loaf pan and bake for 55 to 65 minutes, checking for doneness with a toothpick.
- Allow to cool in the pan for 10 to 15 minutes before transferring to a wire rack to cool completely.
- Slice and serve warm or at room temperature.
