A bold and flavorful Italian pasta dish featuring a rich tomato-based sauce infused with olives, capers, and garlic. Perfect for a quick, satisfying meal that delivers big flavors with minimal effort.
Ingredients
Scale
For the Pasta:
- 12 oz spaghetti
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- ¼ teaspoon red pepper flakes (optional, for heat)
- 1 (14 oz) can diced tomatoes
- ¼ cup black or Kalamata olives, sliced
- 2 tablespoons capers, rinsed and drained
- 4–5 anchovy fillets, chopped (optional, for deep umami flavor)
- ¼ cup fresh parsley, chopped
- Salt and black pepper, to taste
- Cherry tomatoes, halved (optional, for garnish)
Instructions
Step 1: Cook the Pasta
- Fill a large pot with water and bring it to a rolling boil.
- Add a generous amount of salt (about 1-2 tablespoons) to season the pasta.
- Add the spaghetti and cook according to package instructions until al dente (firm to the bite).
- Reserve ½ cup of pasta water, then drain the pasta and set it aside.
Step 2: Prepare the Sauce
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and red pepper flakes (if using) and sauté until fragrant, about 30 seconds.
- Stir in the anchovy fillets (if using) and cook for 1 minute, breaking them down with a spoon until they dissolve into the oil.
- Add diced tomatoes, olives, and capers, stirring well to combine all the ingredients.
- Let the sauce simmer for 10 minutes, allowing the flavors to meld together.
- Taste and season with salt and black pepper as needed (be careful with salt, as the capers and olives already add a salty kick).
Step 3: Combine Pasta and Sauce
- Add the cooked spaghetti to the skillet with the sauce.
- Toss everything together, ensuring that the pasta is evenly coated.
- If the sauce is too thick, gradually stir in the reserved pasta water a little at a time until you reach the desired consistency.
- Remove from heat and stir in the fresh parsley for added freshness and flavor.
Step 4: Serve and Garnish
- Plate the Spaghetti alla Puttanesca in individual servings.
- Garnish with halved cherry tomatoes (if using) for extra color and a slight sweetness.
- Drizzle with a little extra virgin olive oil for added richness.
- Serve warm and enjoy!
Notes
- Use high-quality ingredients: Since this dish relies on a few simple components, using good-quality olive oil, olives, and tomatoes makes a big difference in flavor.
- Control the salt: The capers, olives, and anchovies add a natural saltiness, so adjust the salt carefully. Taste the sauce before adding extra.
- Let the sauce simmer: Allowing the sauce to cook for at least 10 minutes ensures that all the flavors come together beautifully.
- Customize the heat: If you enjoy a spicier kick, add more red pepper flakes or a pinch of chili powder.
- Pasta water is key: The reserved pasta water helps loosen the sauce and adds a touch of starch, helping the sauce stick to the spaghetti.
