- 1 pound chicken thighs, sliced
- 1 tablespoon soy sauce
- 1 tablespoon chili paste, such as gochujang or sambal
- 1 teaspoon garlic powder
- 4 packs ramen noodles, seasoning discarded
- 4 cups chicken broth
- 1/2 cup heavy cream or coconut milk
- 3 garlic cloves, minced
- Sliced green onions, for topping
- Sesame seeds, for topping
- Boiled eggs, halved (optional)
Instructions
- Begin by combining the sliced chicken thighs in a large bowl with the soy sauce, chili paste, and garlic powder. Make sure each piece of chicken is well-coated. Cover the bowl with plastic wrap or a lid and let it marinate in the refrigerator for about 10 to 15 minutes.
- Heat a large skillet over medium-high heat. Once hot, carefully add the marinated chicken thighs. Sauté the chicken for about 5-7 minutes until browned and fully cooked. Remove from the skillet and set aside.
- In a large soup pot, pour in 4 cups of chicken broth and add minced garlic. Bring to a simmer over medium heat. Stir in heavy cream or coconut milk.
- Add ramen noodles to the simmering broth. Cook according to package instructions, about 4-5 minutes. Stir occasionally.
- Return sautéed chicken to the pot with cooked noodles. Stir gently to combine. Ladle into bowls and garnish with green onions, sesame seeds, and optional boiled eggs. Serve hot and enjoy!
Notes
For a lighter broth, substitute heavy cream with low-fat milk or omit altogether. You can also use homemade chicken stock for richer flavor.
