- 2 chicken breasts, boneless and skinless
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 can (14 oz) diced tomatoes, drained
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium heat. Sear chicken breasts for 4 to 5 minutes on each side. Remove and set aside.
- Add onion, bell pepper, and garlic to the skillet; sauté for 3 to 4 minutes.
- Add chili powder, smoked paprika, cayenne pepper, salt, and pepper. Stir for 1 minute.
- Stir in rice, chicken broth, and diced tomatoes. Mix well.
- Return chicken to the skillet, cover tightly, and bake for 30 to 35 minutes.
- Remove from oven, let rest for 5 minutes, then garnish with cilantro and serve.
