Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can (14 oz) diced tomatoes, drained
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat. Sear chicken breasts for 4 to 5 minutes on each side. Remove and set aside.
  3. Add onion, bell pepper, and garlic to the skillet; sauté for 3 to 4 minutes.
  4. Add chili powder, smoked paprika, cayenne pepper, salt, and pepper. Stir for 1 minute.
  5. Stir in rice, chicken broth, and diced tomatoes. Mix well.
  6. Return chicken to the skillet, cover tightly, and bake for 30 to 35 minutes.
  7. Remove from oven, let rest for 5 minutes, then garnish with cilantro and serve.
