  • 2 large eggs, whisked
  • 1 cup cornstarch
  • Salt and pepper to taste
  • Vegetable oil for frying
  • ½ cup buffalo sauce
  • ¼ cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons soy sauce
  • 3 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon mustard powder
  • (Optional) Chili powder for extra heat
  • Green onions for garnish

Instructions

  1. Start by cutting the chicken into bite-sized pieces and patting them dry with paper towels. Season the cut chicken pieces with salt and pepper to taste. Prepare for the breading process by dipping the chicken pieces in whisked eggs, then dredge them in cornstarch. For extra crispiness, dip them back into the egg mixture again.
  2. Heat vegetable oil in a frying pan or deep fryer to about 365°F. Fry the chicken pieces in batches for 3–4 minutes on each side until golden brown. Transfer to a wire rack.
  3. In a mixing bowl, combine the buffalo sauce, brown sugar, apple cider vinegar, soy sauce, melted butter, garlic powder, mustard powder, and optional chili powder. Whisk until the sugar dissolves.
  4. Preheat the oven to 350°F. Toss the fried chicken in the prepared sauce. Transfer to a baking dish and bake for 10 minutes, toss again, then bake for another 10 minutes.
  5. Sprinkle with chopped green onions before serving alongside rice or stir-fried vegetables.

Notes

Allow the fried chicken to cool on a wire rack to maintain crispiness. Adjust sweetness or spiciness by modifying the amounts of brown sugar or buffalo sauce.
