  • 1.5 pounds boneless skinless chicken thighs or breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoons unsalted butter, melted
  • ½ cup Parmesan cheese, freshly grated
  • 2 tablespoons fresh parsley or chives, chopped
  • 8 wooden or metal skewers

Instructions

  1. Start by cutting the chicken into 1½-inch chunks. This size ensures even cooking, so the pieces will be tender and juicy throughout the grilling process.
  2. In a large mixing bowl, combine the olive oil, minced garlic, lemon juice, crushed red pepper flakes, salt, and black pepper. Whisk everything together until well-blended.
  3. Add the cut chicken to the bowl with the marinade. Toss everything together to ensure each piece is well coated. Cover the bowl with plastic wrap and refrigerate it for at least 30 minutes.
  4. While the chicken marinates, soak your wooden skewers in water (if using) for about 30 minutes.
  5. Preheat your grill to medium-high heat and grill the skewers for about 10–12 minutes, turning frequently to achieve that beautiful char on all sides.
  6. Once cooked, remove the skewers from the heat and brush them with melted butter, then sprinkle generously with Parmesan cheese.

Notes

For enhanced flavor, prepare the marinade a day in advance and marinate the chicken overnight.
