Ingredients

  • 500 g (1 lb) chicken breast or thighs, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil (for cooking)
  • 2 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 red chili, finely chopped (adjust to taste)
  • 1/4 cup soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or lime juice
  • 1 tbsp sriracha or chili paste (adjust for spice level)
  • 1 tsp sesame oil (optional)
  • 1/2 cup chicken broth or water
  • 1 tsp cornstarch mixed with 1 tbsp water (for thickening)

Instructions

  1. Start by seasoning the chicken pieces with a sprinkle of salt and pepper, ensuring they are well coated for a base of flavor.
  2. Then, for a delightful crunch and texture, toss those seasoned chicken pieces in the cornstarch until they are lightly coated.
  3. Next, heat vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully add in the coated chicken pieces.
  4. Allow them to cook for about 5 to 6 minutes, turning occasionally, until they turn a luscious golden brown and are cooked through. Once ready, remove the chicken from the skillet and set it aside on a plate.
  5. In the same skillet, add a little more oil if necessary. Start sautéing the grated ginger, minced garlic, and finely chopped chili over medium heat until they become aromatic.
  6. Once fragrant, pour in your soy sauce, honey (or brown sugar), rice vinegar (or lime juice), and sriracha (or chili paste) into the skillet. Stir everything together well.
  7. Next, add the chicken broth to the skillet and bring the mixture to a gentle simmer.
  8. After a minute of simmering, incorporate the cornstarch slurry to thicken the sauce.
  9. After the sauce has thickened, carefully return the chicken pieces to the skillet.
  10. Toss the chicken in the sauce so each piece gets a coat of that glaze.
  11. Sprinkle chopped green onions and sesame seeds over the chicken before serving.
