- 500 g (1 lb) chicken breast or thighs, cut into bite-sized pieces
- Salt and pepper, to taste
- 2 tbsp cornstarch
- 2 tbsp vegetable oil (for cooking)
- 2 tbsp fresh ginger, grated
- 3 cloves garlic, minced
- 1 red chili, finely chopped (adjust to taste)
- 1/4 cup soy sauce
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar or lime juice
- 1 tbsp sriracha or chili paste (adjust for spice level)
- 1 tsp sesame oil (optional)
- 1/2 cup chicken broth or water
- 1 tsp cornstarch mixed with 1 tbsp water (for thickening)
Instructions
- Start by seasoning the chicken pieces with a sprinkle of salt and pepper, ensuring they are well coated for a base of flavor.
- Then, for a delightful crunch and texture, toss those seasoned chicken pieces in the cornstarch until they are lightly coated.
- Next, heat vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully add in the coated chicken pieces.
- Allow them to cook for about 5 to 6 minutes, turning occasionally, until they turn a luscious golden brown and are cooked through. Once ready, remove the chicken from the skillet and set it aside on a plate.
- In the same skillet, add a little more oil if necessary. Start sautéing the grated ginger, minced garlic, and finely chopped chili over medium heat until they become aromatic.
- Once fragrant, pour in your soy sauce, honey (or brown sugar), rice vinegar (or lime juice), and sriracha (or chili paste) into the skillet. Stir everything together well.
- Next, add the chicken broth to the skillet and bring the mixture to a gentle simmer.
- After a minute of simmering, incorporate the cornstarch slurry to thicken the sauce.
- After the sauce has thickened, carefully return the chicken pieces to the skillet.
- Toss the chicken in the sauce so each piece gets a coat of that glaze.
- Sprinkle chopped green onions and sesame seeds over the chicken before serving.
