  • ¼ cup sliced red bell peppers
  • ½ cup lean ground beef
  • ¼ cup sautéed mushrooms
  • ¼ cup broccoli florets
  • ¼ cup sliced zucchini
  • 1 tbsp soy sauce or teriyaki sauce
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • ½ tsp chili flakes (optional)
  • Salt and pepper, to taste

Instructions

  1. Start by heating your skillet over medium-high heat. Add the lean ground beef along with minced garlic, and cook it while stirring to break it apart. Add soy sauce and chili flakes to the skillet, which will infuse the beef with extraordinary flavor. Stir everything together until the beef is well browned and reaches an internal temperature of 160°F.
  2. Once the beef is fully cooked, remove it from the skillet and set it aside. In the same pan, pour in a tablespoon of olive oil and let it heat. Add the sliced mushrooms, zucchini, red bell peppers, and broccoli florets. Stir them frequently, allowing them to cook until they are tender yet retain a bit of crunch.
  3. If you haven’t done so already, prepare the white rice according to package instructions. Once cooked, keep it warm in the pot or a rice cooker, ready to serve.
  4. In a bowl, layer the warm rice as your base, followed by sections of the flavorful ground beef and the sautéed veggies.
