This Spicy Jalapeño Cheddar Sausage & Shrimp Ramen is a perfect blend of comfort and spice!
Ingredients
Scale
- 12–14 medium shrimp, peeled & deveined
- 2 jalapeño cheddar sausages, sliced
- 2 soft-boiled eggs (6–7 minutes, peeled)
- 1 jalapeño, sliced
- 2 tbsp green onions, chopped
- 1 tsp paprika
- 1 tsp Cajun seasoning
- ½ tsp garlic powder
- ½ tsp chili powder
- Salt & pepper, to taste
- 1 tbsp butter + 1 tbsp oil
- 3 cloves garlic, minced
- 1 small onion, diced
- ¼ cup red bell pepper, diced
- 3 cups chicken broth
- 1 cup milk or half & half
- ½ cup shredded cheddar cheese
- 2 tbsp cream cheese
- 1 tsp soy sauce
- 1 tsp chili oil (optional)
- 1 ramen noodle block (or 2 for larger portions)
Instructions
- Begin by seasoning the shrimp to pack them with flavor. In a mixing bowl, combine paprika, Cajun seasoning, garlic powder, chili powder, along with salt and pepper to taste. Toss the peeled and deveined shrimp in this mixture ensuring they are well-coated.
- Heat a skillet over medium-high heat and add the oil. Once hot, add the seasoned shrimp and sear them for about 2 minutes on each side until they turn pink and have a slight char. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the sliced jalapeño cheddar sausage. Cook until browned on both sides, about 3-4 minutes, then set aside with the shrimp.
- In a large pot, melt the butter combined with a drizzle of oil over medium heat. Add minced garlic, diced onions, and red bell peppers. Sauté until fragrant, about 3-4 minutes.
- Pour in the chicken broth and soy sauce, bringing to a gentle simmer. Slowly stir in the milk or half & half, then gradually add cream cheese and shredded cheddar cheese, stirring until smooth.
- Add the ramen noodle block directly into the broth and cook until tender, about 3 minutes.
- Return the seared shrimp and sausage to the pot, stirring gently to combine. Allow everything to meld together for another minute. Top with halved soft-boiled eggs, sliced jalapeños, and fresh chopped green onions.
