Ingredients

  • 1214 medium shrimp, peeled & deveined
  • 2 jalapeño cheddar sausages, sliced
  • 2 soft-boiled eggs (67 minutes, peeled)
  • 1 jalapeño, sliced
  • 2 tbsp green onions, chopped
  • 1 tsp paprika
  • 1 tsp Cajun seasoning
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • Salt & pepper, to taste
  • 1 tbsp butter + 1 tbsp oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • ¼ cup red bell pepper, diced
  • 3 cups chicken broth
  • 1 cup milk or half & half
  • ½ cup shredded cheddar cheese
  • 2 tbsp cream cheese
  • 1 tsp soy sauce
  • 1 tsp chili oil (optional)
  • 1 ramen noodle block (or 2 for larger portions)

Instructions

  1. Begin by seasoning the shrimp to pack them with flavor. In a mixing bowl, combine paprika, Cajun seasoning, garlic powder, chili powder, along with salt and pepper to taste. Toss the peeled and deveined shrimp in this mixture ensuring they are well-coated.
  2. Heat a skillet over medium-high heat and add the oil. Once hot, add the seasoned shrimp and sear them for about 2 minutes on each side until they turn pink and have a slight char. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the sliced jalapeño cheddar sausage. Cook until browned on both sides, about 3-4 minutes, then set aside with the shrimp.
  4. In a large pot, melt the butter combined with a drizzle of oil over medium heat. Add minced garlic, diced onions, and red bell peppers. Sauté until fragrant, about 3-4 minutes.
  5. Pour in the chicken broth and soy sauce, bringing to a gentle simmer. Slowly stir in the milk or half & half, then gradually add cream cheese and shredded cheddar cheese, stirring until smooth.
  6. Add the ramen noodle block directly into the broth and cook until tender, about 3 minutes.
  7. Return the seared shrimp and sausage to the pot, stirring gently to combine. Allow everything to meld together for another minute. Top with halved soft-boiled eggs, sliced jalapeños, and fresh chopped green onions.
