- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 cup Monterey Jack cheese, shredded
- 1/4 cup fresh cilantro, chopped (optional)
- 1 jalapeño, thinly sliced (optional for extra heat)
- 1 tablespoon lime juice
Instructions
- Preheat your oven to 375°F (190°C) and prepare a 9×13 inch baking dish by greasing it with olive oil.
- In a small bowl, mix salt, black pepper, chili powder, garlic powder, onion powder, and smoked paprika.
- Rub the spice mixture all over the chicken breasts.
- Heat olive oil in a large skillet over medium-high heat and sear the chicken for 3-4 minutes on each side until golden brown.
- Transfer the chicken to the baking dish, place sliced bell peppers around them, and sprinkle cheese on top.
- Bake for 25 minutes or until the chicken is cooked through and the cheese is bubbly. Drizzle lime juice before serving.
Notes
The spice rub can be prepared ahead of time and stored in an airtight container. Adjust spices according to your heat preference.
