Description

A delightful and healthy crustless quiche packed with spinach, mushrooms, and feta.


Ingredients

  • 1 tablespoon olive oil
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 1/4 cup diced onion
  • 4 ounces crumbled feta cheese
  • 8 large eggs
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • Cooking spray, for greasing

Instructions

  1. Preheat your oven to 375°F (190°C) and coat a pie dish with cooking spray.
  2. Sauté the sliced mushrooms and onions in olive oil over medium heat for 6–7 minutes.
  3. Add fresh spinach and cook until wilted, about 2 minutes.
  4. In a bowl, whisk together eggs, milk, salt, pepper, garlic powder, and thyme.
  5. Fold in sautéed vegetables and feta cheese into the egg mixture.
  6. Pour the mixture into the pie dish and bake for 35–40 minutes until set and golden.
  7. Let stand for 10 minutes before slicing and serving warm.
