A delightful and healthy crustless quiche packed with spinach, mushrooms, and feta.

- 1 tablespoon olive oil
- 8 ounces mushrooms, sliced
- 4 cups fresh spinach
- 1/4 cup diced onion
- 4 ounces crumbled feta cheese
- 8 large eggs
- 1 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried thyme
- Cooking spray, for greasing
Instructions
- Preheat your oven to 375°F (190°C) and coat a pie dish with cooking spray.
- Sauté the sliced mushrooms and onions in olive oil over medium heat for 6–7 minutes.
- Add fresh spinach and cook until wilted, about 2 minutes.
- In a bowl, whisk together eggs, milk, salt, pepper, garlic powder, and thyme.
- Fold in sautéed vegetables and feta cheese into the egg mixture.
- Pour the mixture into the pie dish and bake for 35–40 minutes until set and golden.
- Let stand for 10 minutes before slicing and serving warm.
