  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar or lemon juice
  • 1/8 teaspoon salt
  • Freshly ground black pepper to taste
  • 1/8 teaspoon smoked paprika plus extra for garnish
  • 12 large pitted black olives

Instructions

  1. Start by placing the eggs in a medium-sized saucepan and covering them with cold water. Heat the saucepan over medium-high heat until the water reaches a rolling boil. Once boiling, cover the saucepan with a lid and remove it from heat. Let the eggs sit in the hot water for 10 minutes to ensure they cook perfectly. The gentle heat will cook the eggs without overcooking the yolks.
  2. After the eggs have rested, it’s time to cool them down. Carefully drain the hot water from the saucepan and place the eggs under cold running water. This will stop the cooking process and allow you to handle the eggs more easily. Once they are cool, gently tap each egg on a hard surface to crack the shell, and begin peeling them. Be careful while peeling to keep the egg whites intact.
  3. Once peeled, take each egg and cut them in half lengthwise. Carefully scoop out the yolks with a small spoon and place them into a mixing bowl. Ensure that the egg whites remain intact as they will serve as the base for your deviled eggs.
  4. In the bowl with the yolks, add the mayonnaise, Dijon mustard, vinegar or lemon juice, salt, pepper, and smoked paprika. Using a fork, mash the yolk mixture until it becomes creamy and smooth. This blend will provide a rich base that will bring flavor to your deviled eggs. If you prefer a bit of tang, you might want to adjust the vinegar or lemon juice according to your taste.
  5. Now comes the fun part! Using a piping bag or simply a spoon, fill each hollowed-out egg white half with the yolk mixture. Ensure that each egg is generously filled to maximize flavor and presentation.
  6. The decoration is where the magic happens! Slice each black olive in half, placing one half on top of the deviled egg as the spider’s body. Take the other half and cut it into thin strips, which will serve as the spider’s legs. Arrange three to four olive strips on each side of the body, and voila, your spooky spiders are complete!
  7. If desired, lightly sprinkle some smoked paprika on top for an added layer of flavor and a touch of color. These spooky spider deviled eggs are best served chilled, making them an excellent choice for your Halloween festivities.
