Ingredients

  • 1 cup cottage cheese (4% fat recommended)
  • ¼ teaspoon smoked paprika
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 2 tablespoons fresh chives, finely chopped
  • Optional: ¼ cup diced bell peppers, ¼ cup chopped spinach, 2 tablespoons sun-dried tomatoes

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly oil your chosen baking dish.
  2. Using a food processor, blend the cottage cheese until smooth.
  3. Whisk together the eggs; stir in cottage cheese, Parmesan, chives, garlic powder, and smoked paprika; season with salt and pepper.
  4. Pour the mixture into your prepared baking dish. Bake for 15–17 minutes.
  5. Let cool for 2–3 minutes before serving.

Notes

Feel free to double the recipe and use a larger baking dish for more servings. If the top starts browning too quickly, tent with foil.
