- 1 cup cottage cheese (4% fat recommended)
- ¼ teaspoon smoked paprika
- ¼ cup grated Parmesan cheese
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
- 2 tablespoons fresh chives, finely chopped
- Optional: ¼ cup diced bell peppers, ¼ cup chopped spinach, 2 tablespoons sun-dried tomatoes
Instructions
- Preheat your oven to 375°F (190°C). Lightly oil your chosen baking dish.
- Using a food processor, blend the cottage cheese until smooth.
- Whisk together the eggs; stir in cottage cheese, Parmesan, chives, garlic powder, and smoked paprika; season with salt and pepper.
- Pour the mixture into your prepared baking dish. Bake for 15–17 minutes.
- Let cool for 2–3 minutes before serving.
Notes
Feel free to double the recipe and use a larger baking dish for more servings. If the top starts browning too quickly, tent with foil.
