Ingredients

  • 2 ribeye steaks (about 1 inch thick, approximately 1 lb each)
  • 1 tablespoon olive oil (for cooking)
  • 4 cloves garlic, minced
  • 1 cup heavy cream (240 ml)
  • 4 tablespoons butter (divided)
  • 2 teaspoons fresh thyme, chopped (or more for garnish)
  • Salt and black pepper to taste

Instructions

  1. Let ribeye steaks rest at room temperature for about 30 minutes. Season with salt and freshly ground black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear steaks for 4-5 minutes on each side, adding 2 tablespoons of butter for enhanced flavor.
  3. Remove steaks from skillet and rest under aluminum foil for 5-10 minutes.
  4. In the same skillet, melt remaining 2 tablespoons of butter, saute minced garlic, add heavy cream, and season with thyme, salt, and pepper.
  5. Return steaks to skillet, coat in sauce, and simmer for 2-3 minutes.
  6. Slice steaks and serve with extra sauce, garnished with fresh thyme.
