- 2 ribeye steaks (about 1 inch thick, approximately 1 lb each)
- 1 tablespoon olive oil (for cooking)
- 4 cloves garlic, minced
- 1 cup heavy cream (240 ml)
- 4 tablespoons butter (divided)
- 2 teaspoons fresh thyme, chopped (or more for garnish)
- Salt and black pepper to taste
Instructions
- Let ribeye steaks rest at room temperature for about 30 minutes. Season with salt and freshly ground black pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear steaks for 4-5 minutes on each side, adding 2 tablespoons of butter for enhanced flavor.
- Remove steaks from skillet and rest under aluminum foil for 5-10 minutes.
- In the same skillet, melt remaining 2 tablespoons of butter, saute minced garlic, add heavy cream, and season with thyme, salt, and pepper.
- Return steaks to skillet, coat in sauce, and simmer for 2-3 minutes.
- Slice steaks and serve with extra sauce, garnished with fresh thyme.
