Instructions
- Preheat the oven to 350°F (175°C) and line a cookie sheet with parchment paper.
- Cream the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla and mix well.
- Combine the all-purpose flour, baking powder, and salt in a separate bowl and gradually mix into the wet ingredient.
- In another bowl, beat the cream cheese and powdered sugar until smooth, adding strawberry jam until swirled.
- Form tablespoon-sized rounds of cookie dough on the sheet, adding a dollop of cream cheese filling in the center.
- Mix the crumble topping ingredients and sprinkle over the cookies.
- Bake for 12-15 minutes until golden, then let cool on a wire rack.
