  • Author: Alioui

Description

Grilled Rosemary Garlic Lamb Chops are savory, herbaceous, and tangy, providing a gourmet experience with minimal fuss.

Ingredients

Scale
  • 600800g (1.2–1.6 lb) lamb chops (4–8, depending on size)
  • 2½ tbsp red wine vinegar
  • 1 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 3 garlic cloves, minced
  • 1¼ tsp fresh rosemary, finely chopped (or 1 tsp dried rosemary)
  • ½ tsp dried thyme
  • ¾1 tsp sea salt
  • Freshly ground black pepper, to taste
  • Oil for grilling (if required)

Instructions

  1. Begin by gathering all your marinade ingredients in a large mixing bowl. Carefully measure out the red wine vinegar, olive oil, and honey. Add the minced garlic, finely chopped rosemary, and dried thyme to the mix. Sprinkle in the sea salt and a generous grind of black pepper. Stir everything together until well combined, ensuring the salt dissolves completely in the liquid.
  2. Once the marinade is ready, immerse the lamb chops, making sure each piece is thoroughly coated. The marinade serves not only to flavor but to tenderize the lamb chops. Ideally, let them marinate for at least 2 hours to allow the flavors to penetrate the meat. For even better results, let them rest in the marinade overnight, up to a maximum of 24 hours, in the refrigerator.
  3. Preheat your barbecue grill or skillet to medium-high heat. Before placing the chops, you might want to brush the grill or skillet with a bit of oil, especially if it tends to stick. Place the marinated lamb chops on the grill, cooking them for about 3 minutes on each side for medium doneness. Adjust the cooking time based on the thickness of the chops and your preferred level of doneness.
  4. Once cooked to your liking, transfer the lamb chops to a plate and cover them loosely with aluminum foil. Allow them to rest for 5 minutes. This resting phase ensures that the juices redistribute throughout the meat, resulting in succulent and tender chops. Serve these aromatic lamb chops with your favorite sides or a refreshing summer salad.

Notes

For the best flavor, use fresh rosemary over dried if available. Allow enough marinating time for the flavors to penetrate deeply. If grilling indoors, ensure good ventilation due to the smoke. Resting the lamb is optional but highly recommended for juiciness.
