Description

Sweet and Savory Grilled St. Louis Ribs provide a mouthwatering experience with sweet, smoky, and savory flavors that make them a perfect barbecue treat for any occasion.

Ingredients

Scale
  • 2 racks of St. Louis-style ribs
  • 1/4 cup brown sugar
  • 1/4 cup paprika
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup barbecue sauce (your favorite)

Instructions

  1. Begin by removing the tough membrane from the back of the ribs, as this allows both spices and heat to better penetrate the meat, resulting in more tender ribs. Pat the ribs dry with paper towels to ensure the rub adheres well.
  2. In a small bowl, mix together the brown sugar, paprika, black pepper, salt, chili powder, garlic powder, onion powder, and cayenne pepper. Generously coat the ribs with this dry rub on both sides, making sure to press the seasoning into the meat to build a flavorful crust.
  3. Place the ribs on the grill with the bone side facing down. Allow them to cook slowly for 2-3 hours, turning occasionally for even cooking. If using a two-zone grill setup, cook the ribs on the indirect heat side and then transfer to direct heat towards the end for a nice char.
  4. As you near the end of the grilling process, usually about the last 10 minutes, brush the ribs with your favorite barbecue sauce. Let them cook until the sauce caramelizes and becomes sticky, enhancing the ribs’ sweet and tangy profile.
  5. After removing the ribs from the grill, let them rest for about 5 minutes. This step allows the juices to redistribute throughout the meat, making for a more succulent bite. Cut between the bones to serve, and enjoy!

Notes

Slow cooking is key. Take your time for the ribs to reach ultimate tenderness. Check the internal temperature, aiming for around 190°F-200°F when done, ensuring the ribs are cooked perfectly.
