Ingredients

  • 1 sheet puff pastry, thawed
  • 1 medium sweet potato, roasted and mashed
  • 8 oz mushrooms, finely chopped
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and black pepper, to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Roast the sweet potato until tender, about 30 minutes, mash, and set aside.
  2. Sauté mushrooms and onions in olive oil, add garlic and thyme, cook until moisture evaporates.
  3. Mix mashed sweet potato with mushroom mixture, fill pastry squares, and fold into a bomb shape.
  4. Brush with egg wash, bake for 15-18 minutes until golden brown, and let cool slightly before serving.
