- 1 sheet puff pastry, thawed
- 1 medium sweet potato, roasted and mashed
- 8 oz mushrooms, finely chopped
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp olive oil or butter
- 1 tsp fresh thyme (or ½ tsp dried)
- Salt and black pepper, to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C). Roast the sweet potato until tender, about 30 minutes, mash, and set aside.
- Sauté mushrooms and onions in olive oil, add garlic and thyme, cook until moisture evaporates.
- Mix mashed sweet potato with mushroom mixture, fill pastry squares, and fold into a bomb shape.
- Brush with egg wash, bake for 15-18 minutes until golden brown, and let cool slightly before serving.

Adjust the seasoning according to your preference, keeping in mind the sweetness of the roasted sweet potato.
