  • 2 lbs beef chuck roast
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup fresh or frozen cranberries
  • 1/2 cup balsamic vinegar
  • 1/2 cup beef broth
  • 1 tablespoon honey
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. To start, preheat your oven to 325°F (163°C). This step is essential to ensure your dish cooks properly and achieves that wonderful, tender texture we’re aiming for.
  2. While the oven is heating, heat the olive oil in a large oven-safe pot over medium-high heat.
  3. Season your beef chuck roast generously with salt and pepper. Once the oil is hot, carefully place the seasoned beef in the pot and sear it on all sides.
  4. After the beef has been seared to golden perfection, remove it from the pot and set it aside.
  5. In the same pot, add the sliced onion and minced garlic. Sauté these aromatic ingredients for about 2 to 3 minutes.
  6. Next, pour in the balsamic vinegar and beef broth, allowing the mixture to sizzle.
  7. Add the honey, cranberries, dried thyme, and dried rosemary to the pot, stirring it all together.
  8. Once everything is well combined, return the seared beef roast to the pot, making sure it is mostly submerged in the savory liquid.
  9. Let it come to a gentle simmer. Cover the pot with a lid or some foil and place it in the preheated oven.
  10. Allow the beef to braise for approximately 3 to 3.5 hours.
  11. Once done, carefully take the pot from the oven and let the beef rest for a few minutes before slicing or shredding.
  12. When serving, don’t forget to ladle some of the luscious balsamic cranberry sauce over the top!
