- 2 lbs beef chuck roast
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 cup fresh or frozen cranberries
- 1/2 cup balsamic vinegar
- 1/2 cup beef broth
- 1 tablespoon honey
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste

- To start, preheat your oven to 325°F (163°C). This step is essential to ensure your dish cooks properly and achieves that wonderful, tender texture we’re aiming for.
- While the oven is heating, heat the olive oil in a large oven-safe pot over medium-high heat.
- Season your beef chuck roast generously with salt and pepper. Once the oil is hot, carefully place the seasoned beef in the pot and sear it on all sides.
- After the beef has been seared to golden perfection, remove it from the pot and set it aside.
- In the same pot, add the sliced onion and minced garlic. Sauté these aromatic ingredients for about 2 to 3 minutes.
- Next, pour in the balsamic vinegar and beef broth, allowing the mixture to sizzle.
- Add the honey, cranberries, dried thyme, and dried rosemary to the pot, stirring it all together.
- Once everything is well combined, return the seared beef roast to the pot, making sure it is mostly submerged in the savory liquid.
- Let it come to a gentle simmer. Cover the pot with a lid or some foil and place it in the preheated oven.
- Allow the beef to braise for approximately 3 to 3.5 hours.
- Once done, carefully take the pot from the oven and let the beef rest for a few minutes before slicing or shredding.
- When serving, don’t forget to ladle some of the luscious balsamic cranberry sauce over the top!
