  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup breadcrumbs (panko preferred)
  • 1 tablespoon olive oil or melted butter

Instructions

  1. Thaw and Prepare the Spinach: Thaw your frozen spinach thoroughly and squeeze out any excess moisture with a clean kitchen towel.
  2. Create the Béchamel Sauce: In a medium saucepan, melt the butter, add chopped onion and sauté until tender, add minced garlic and cook for 1 additional minute.
  3. Whisk in the Flour: Sprinkle flour into the saucepan, whisk continuously for about a minute, then gradually pour in whole milk and heavy cream while whisking.
  4. Season the Sauce: Season béchamel sauce with salt, black pepper, ground nutmeg, and garlic powder; stir in grated Parmesan and 1 cup shredded mozzarella.
  5. Combine Spinach and Sauces: Transfer thawed spinach to a mixing bowl, add sour cream and mayonnaise, pour in cheese sauce and mix well.
  6. Assemble the Casserole: Grease a 9×13-inch baking dish, pour in the spinach mixture, and spread evenly.
  7. Add the Topping: Combine breadcrumbs with olive oil, sprinkle remaining mozzarella over the casserole, followed by the breadcrumb mixture.
  8. Bake to Perfection: Bake for 25 to 30 minutes at 375°F (190°C) until golden brown and bubbling.
