  • 1/2 cup crushed pineapple, drained

  • 1 1/2 cups all-purpose flour

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your loaf pan.
  2. Mash the ripe bananas and mix in the crushed pineapple and shredded coconut.
  3. In another bowl, whisk dry ingredients together.
  4. In a separate bowl, mix eggs, brown sugar, and vegetable oil until smooth. Stir in vanilla.
  5. Fold dry ingredients into wet ingredients gently.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 55-60 minutes or until a toothpick comes out clean.
  8. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
