- 2 ripe bananas, mashed
- 1/2 cup crushed pineapple, drained
- 1/4 cup shredded coconut
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Instructions
- Preheat the oven to 350°F (175°C) and prepare your loaf pan.
- Mash the ripe bananas and mix in the crushed pineapple and shredded coconut.
- In another bowl, whisk dry ingredients together.
- In a separate bowl, mix eggs, brown sugar, and vegetable oil until smooth. Stir in vanilla.
- Fold dry ingredients into wet ingredients gently.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 55-60 minutes or until a toothpick comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
