  • 2 roma tomatoes, diced
  • 1 avocado, diced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Begin by addressing the black beans and black-eyed peas. Open the cans, and using a strainer, drain off the liquid. Rinse them well under cold water until the water runs clear.
  2. Next, it’s time to transform your fresh veggies into the star of the dish. Dice the red and green bell peppers, red onion, roma tomatoes, jalapeño (if using), and avocado into bite-sized pieces.
  3. In a large mixing bowl, combine the drained black beans, black-eyed peas, corn, diced peppers, red onion, tomatoes, and jalapeño. Gently toss these ingredients to avoid mashing the beans.
  4. In a smaller bowl, prepare the dressing by whisking together the fresh lime juice, olive oil, salt, and black pepper. Pour this dressing over the combined mixture, and stir gently.
  5. Just before serving, fold the diced avocado and chopped cilantro into the mixture. For the best taste experience, let the dip chill in the refrigerator for about 30 minutes to an hour.
