This Grilled Cheese with Gouda, Roasted Mushrooms, and Onions brings comfort and delight in every bite!
Ingredients

- 8 ounces mushrooms, sliced
- 1 medium onion, sliced (the sweeter, the better)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 tablespoons butter
- 4 slices of bread of choice
- 1 cup gouda, shredded
Instructions
- Start by preheating your oven to 400°F (200°C). Spread the sliced mushrooms and onions on a baking sheet and drizzle with olive oil. Toss with salt and pepper. Roast for about 20 minutes.
- Heat a skillet on medium heat and add 4 tablespoons of butter. Assemble the sandwiches with gouda, roasted vegetables, and more gouda in between slices of bread.
- Dunk each sandwich in melted butter and cook in the skillet until golden brown, about 2-3 minutes per side.
Notes
Store leftovers in an airtight container for up to two days. Reheat in a skillet for best results.
