Description

This Grilled Cheese with Gouda, Roasted Mushrooms, and Onions brings comfort and delight in every bite!


Ingredients

  • 8 ounces mushrooms, sliced
  • 1 medium onion, sliced (the sweeter, the better)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 tablespoons butter
  • 4 slices of bread of choice
  • 1 cup gouda, shredded

Instructions

  1. Start by preheating your oven to 400°F (200°C). Spread the sliced mushrooms and onions on a baking sheet and drizzle with olive oil. Toss with salt and pepper. Roast for about 20 minutes.
  2. Heat a skillet on medium heat and add 4 tablespoons of butter. Assemble the sandwiches with gouda, roasted vegetables, and more gouda in between slices of bread.
  3. Dunk each sandwich in melted butter and cook in the skillet until golden brown, about 2-3 minutes per side.

Notes

Store leftovers in an airtight container for up to two days. Reheat in a skillet for best results.
