Description

Nothing warms the soul quite like a hearty Ultimate Stuffed Beef Burrito.


Ingredients

  • 1 lb lean ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning or homemade (1 tsp cumin, 1 tsp chili powder, 1/2 tsp paprika, 1/2 tsp oregano, salt & pepper)
  • 1/4 cup tomato sauce or salsa
  • 1 tbsp olive oil
  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • 1/2 tsp salt
  • 1/2 tsp cumin (optional)
  • 1 can black beans, drained and rinsed
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream
  • 1/2 cup guacamole
  • 1/2 cup pico de gallo or diced tomatoes
  • Fresh cilantro, chopped (optional)
  • 6 large flour tortillas (10-inch burrito size)

Instructions

  1. Start by bringing the water or chicken broth to a boil in a medium-sized pot. Once boiling, add the rice along with salt and the optional cumin for added flavor. Cover the pot and let it simmer for about 15 to 18 minutes, or until the rice becomes soft and fluffy. Fluff it gently with a fork to separate the grains before setting it aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the finely chopped onions and sauté them for about 3 to 4 minutes until they become soft and translucent. Next, stir in the minced garlic and cook for another minute until fragrant.
  3. Now it’s time to add the ground beef into the skillet. Use a spatula to break it apart as it cooks, browning it for around 6 to 8 minutes. Be sure to drain any excess grease.
  4. After browning the beef, stir in the taco seasoning along with the tomato sauce or salsa. Allow this mixture to simmer for 3 to 4 minutes.
  5. While the beef mixture is simmering, warm the tortillas. You can microwave them wrapped in a damp paper towel for about 30 seconds or heat them in a dry skillet.
  6. To assemble, lay a warm tortilla flat and start layering your fillings. Spread a generous portion of rice, followed by the seasoned beef mixture, black beans, and cheese. Top with your favorite toppings.
  7. With the fillings in place, fold the sides of the tortilla inward and roll it up tightly from the bottom to the top.
  8. Slice the burrito in half if desired, and serve warm with additional toppings on the side.

Notes

Ensure you warm your tortillas before assembling to avoid cracking.
