- 2 ripe peaches, thinly sliced
- 1 cup fresh blueberries
- 4 cups mixed greens (baby spinach, arugula, or spring mix)
- ½ cup crumbled feta cheese
- ¼ cup toasted pecans or walnuts (optional)
Instructions
- Start your salad journey by preparing the honey vinaigrette. In a small mixing bowl, combine 3 tablespoons of extra virgin olive oil with 2 tablespoons of honey, 1 tablespoon of apple cider vinegar, and 1 teaspoon of Dijon mustard. Season it with salt and black pepper to taste. Using a whisk, blend these ingredients until they are well-combined and smooth.
- In a large mixing bowl, toss your fresh mixed greens together and then gently fold in the sliced peaches and blueberries.
- Drizzle approximately half of the honey vinaigrette over your salad mixture, toss gently, sprinkle the crumbled feta cheese on top, and serve with the remaining vinaigrette on the side.
Notes
This salad is best consumed fresh, but you can store leftovers in the fridge for up to a day. Note that the greens may wilt slightly.
