- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (softened)
- 1/4 cup buttermilk (or substitute with milk and lemon juice/vinegar)
- 1 large egg
- 1 teaspoon vanilla extract
- Gel food coloring (pink and blue)
- Cotton candy flavoring (optional)
Instructions
- Start by preheating your oven to 350°F (175°C) so it’s nice and hot when your cookies are ready to bake. Line your baking sheets with parchment paper.
- In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a larger bowl, use an electric mixer to beat the softened butter and granulated sugar together until fluffy and light.
- Add the egg, vanilla extract, and buttermilk into the creamed butter and sugar mixture.
- Gradually add the dry flour mixture into the bowl of wet ingredients. Stir just until the dry ingredients are moistened.
- Divide the dough into two equal parts. Add a few drops of pink gel food coloring to one portion, and blue to the other. Mix until each is evenly colored.
- Take a bit of each colored dough, roll them together gently to form balls, and place them on your prepared baking sheet.
- Bake your cookies in the preheated oven for 10-12 minutes or until the edges gain a slight golden hue.
- After baking, let the cookies rest on the baking sheet for a few minutes to firm up, then transfer them to a wire rack to cool completely.
Notes
Chill the cookie dough for 20-30 minutes before baking to enhance the cookies’ shape and prevent over-spreading.
