Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 8 oz wild mushrooms (such as cremini, shiitake, or oyster), sliced
  • 4 cups vegetable or chicken broth
  • 1 bunch kale, stems removed and leaves chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)

Instructions

  1. In a large pot, heat the olive oil over medium-low heat. Add the sliced onions and cook for 20 to 25 minutes until golden brown.
  2. Add garlic and cook for 1 to 2 minutes until fragrant.
  3. Add the sliced wild mushrooms and sauté for 5 to 7 minutes until tender.
  4. Pour in the broth, scraping the pot to add flavor. Bring to a gentle simmer.
  5. Add kale and thyme, season with salt and pepper, and simmer for an additional 10 to 15 minutes until the kale is tender.
  6. If using, stir in heavy cream during the last few minutes of cooking.
  7. Ladle soup into bowls and enjoy!
