Ingredients

- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 8 oz wild mushrooms (such as cremini, shiitake, or oyster), sliced
- 4 cups vegetable or chicken broth
- 1 bunch kale, stems removed and leaves chopped
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup heavy cream (optional)
Instructions
- In a large pot, heat the olive oil over medium-low heat. Add the sliced onions and cook for 20 to 25 minutes until golden brown.
- Add garlic and cook for 1 to 2 minutes until fragrant.
- Add the sliced wild mushrooms and sauté for 5 to 7 minutes until tender.
- Pour in the broth, scraping the pot to add flavor. Bring to a gentle simmer.
- Add kale and thyme, season with salt and pepper, and simmer for an additional 10 to 15 minutes until the kale is tender.
- If using, stir in heavy cream during the last few minutes of cooking.
- Ladle soup into bowls and enjoy!
