This zesty Italian Pasta Salad Dressing will elevate any dish with its vibrant flavors.


Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon mayonnaise
  • 1 1/2 teaspoons honey
  • 2 cloves garlic, minced or grated
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon freshly grated Parmesan cheese (optional)
  • Zest of 1/2 lemon (optional)

Instructions

  1. In a mixing bowl or blender, mix together the red wine vinegar, Dijon mustard, and honey until smooth.
  2. Add the minced garlic, oregano, basil, onion powder, and crushed red pepper flakes. Season with salt and pepper to taste.
  3. While whisking or blending, slowly drizzle in the olive oil until emulsified.
  4. Stir in the mayonnaise until creamy.
  5. Optionally, fold in the Parmesan cheese and lemon zest.
  6. Chill for at least 30 minutes before serving. Shake or stir before use.
