Description

Delicate, buttery cookies infused with bright lemon flavor and a sweet citrus glaze—perfectly irresistible!

Ingredients

Scale

For the Cookies:

  • 1 cup (225 g) unsalted butter, softened
  • ½ cup (100 g) powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 2 cups (250 g) all-purpose flour
  • ¼ tsp salt

For the Lemon Glaze:

  • 1 cup (125 g) powdered sugar
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest

Instructions

Step 1: Make the Dough

  1. In a large mixing bowl, use a hand mixer or stand mixer to cream the butter and powdered sugar together until the mixture becomes light and fluffy. This step is crucial as it helps create the cookies’ delicate texture.
  2. Add the vanilla extract, fresh lemon juice, and lemon zest to the mixture, and continue mixing until fully incorporated. The fresh lemon juice enhances the citrusy flavor, while the zest provides an extra burst of lemon aroma.
  3. Gradually add the flour and salt, mixing until a soft dough forms. Be careful not to overmix, as this can make the cookies dense instead of light and tender.

Step 2: Chill the Dough

  1. Gather the dough into a ball and wrap it tightly in plastic wrap.
  2. Refrigerate for at least 30 minutes. Chilling is essential as it firms up the dough, making it easier to handle and preventing excessive spreading during baking.

Step 3: Shape & Bake

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Take the chilled dough and scoop out 1-tablespoon-sized portions, rolling them into smooth balls.
  3. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  4. Slightly flatten each ball with your fingers or the back of a spoon. This ensures even baking and gives them their signature meltaway shape.
  5. Bake in the preheated oven for 10–12 minutes or until the edges are just set and the bottoms are lightly golden.
  6. Remove from the oven and allow the cookies to cool completely on a wire rack before adding the glaze.

Step 4: Prepare the Glaze

  1. In a small bowl, whisk together powdered sugar, fresh lemon juice, and lemon zest until the mixture becomes smooth. If the glaze is too thick, add a few extra drops of lemon juice. If it’s too thin, add a little more powdered sugar.
  2. The glaze should be thick enough to coat the back of a spoon but still drizzle easily over the cookies.

Step 5: Glaze & Serve

  1. Once the cookies have completely cooled, drizzle or spread the lemon glaze over the top of each cookie.
  2. Allow the glaze to set for 15–20 minutes before serving to ensure a firm and glossy finish.
  3. Enjoy your Zesty Lemon Meltaway Cookies with a warm cup of tea, coffee, or as a refreshing treat on a sunny afternoon!

Notes

  • Use fresh lemon juice instead of bottled for the best flavor. Fresh juice provides a brighter and more natural citrus taste.
  • Do not skip chilling the dough! This step prevents the cookies from spreading too much and ensures they hold their shape.
  • For an extra burst of flavor, try adding a pinch of lemon extract to enhance the citrus aroma.
  • Adjust the glaze consistency by adding more powdered sugar for a thicker glaze or more lemon juice for a thinner drizzle.
  • These cookies store well in an airtight container at room temperature for up to 5 days. You can also freeze them for longer storage.
