Ingredients

- 1 cup almond flour
- 1/2 cup unsweetened shredded coconut
- Zest of 2 lemons
- 2 tbsp fresh lemon juice
- 3 tbsp coconut oil, melted
- 3 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- Pinch of salt
- Extra shredded coconut for rolling (optional)
Instructions
- Begin by placing almond flour, shredded coconut, lemon zest, and a pinch of salt into a large mixing bowl.
- Add the fresh lemon juice, melted coconut oil, honey or maple syrup, and vanilla extract to the bowl of dry ingredients.
- If you find the mixture too dry, feel free to add a bit more lemon juice.
- Using a small scoop or your hands, portion out the dough and roll it into small bite-sized balls.
- If you desire an extra layer of texture, roll each ball in additional shredded coconut.
- Place the treat balls on a tray or plate lined with parchment paper and allow them to chill in the refrigerator for at least 30 minutes.
- Once set, serve these delightful treats chilled.
Notes
You can freeze these treat balls for up to a month. Store in an airtight container and thaw before serving.
