Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • Zest of 2 lemons
  • 2 tbsp fresh lemon juice
  • 3 tbsp coconut oil, melted
  • 3 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Extra shredded coconut for rolling (optional)

Instructions

  1. Begin by placing almond flour, shredded coconut, lemon zest, and a pinch of salt into a large mixing bowl.
  2. Add the fresh lemon juice, melted coconut oil, honey or maple syrup, and vanilla extract to the bowl of dry ingredients.
  3. If you find the mixture too dry, feel free to add a bit more lemon juice.
  4. Using a small scoop or your hands, portion out the dough and roll it into small bite-sized balls.
  5. If you desire an extra layer of texture, roll each ball in additional shredded coconut.
  6. Place the treat balls on a tray or plate lined with parchment paper and allow them to chill in the refrigerator for at least 30 minutes.
  7. Once set, serve these delightful treats chilled.

Notes

You can freeze these treat balls for up to a month. Store in an airtight container and thaw before serving.
