- 1 tablespoon olive oil
- 1/4 teaspoon salt

- 1 small jalapeño, finely chopped (optional)
Instructions
- Begin your salad journey by washing and drying all the vegetables thoroughly. Slice the cucumbers into thin rounds or half-moons.
- Finely chop your fresh cilantro and jalapeño. Add these chopped ingredients to your already prepared vegetables.
- In a large mixing bowl, combine the chopped cucumbers, corn, red bell pepper, red onion, cilantro, and jalapeño.
- In a separate small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
- Drizzle the dressing over your combined vegetable mix and toss everything together.
- Allow the salad to sit for about 10 minutes before serving.
