  • 1 tablespoon olive oil

  • 1 small jalapeño, finely chopped (optional)

Instructions

  1. Begin your salad journey by washing and drying all the vegetables thoroughly. Slice the cucumbers into thin rounds or half-moons.
  2. Finely chop your fresh cilantro and jalapeño. Add these chopped ingredients to your already prepared vegetables.
  3. In a large mixing bowl, combine the chopped cucumbers, corn, red bell pepper, red onion, cilantro, and jalapeño.
  4. In a separate small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  5. Drizzle the dressing over your combined vegetable mix and toss everything together.
