- 1 lb ground turkey
- 2 medium zucchinis, sliced into half-moons
- ½ onion, chopped
- 1 yellow bell pepper, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp unsalted butter (for garlic herb drizzle)
- 1 garlic clove, minced
- 1 tbsp chopped fresh parsley
- Juice of ½ lemon
- ¼ cup chopped fresh parsley (for garnish)
Instructions
- Start by heating the olive oil in a large skillet over medium heat. Once the oil is hot, add the ground turkey to the skillet. Using a spatula or wooden spoon, break the turkey apart as it cooks, allowing it to brown evenly. To enhance its flavor, stir in the smoked paprika, salt, and black pepper while cooking. Once the turkey is no longer pink and has a nice golden color, remove it from the skillet and set it aside.
- Using the same skillet, add the chopped onion and diced yellow bell pepper. Cook for about 3–4 minutes, stirring occasionally until the onion becomes translucent. Next, introduce the sliced zucchinis and minced garlic to the skillet. Continue cooking for an additional 4–5 minutes until the zucchini is just tender but still has a slight crunch.
- In a small pan, melt the unsalted butter over low heat. Add the minced garlic and chopped fresh parsley to the melted butter and stir well. Squeeze the juice of half a lemon into the mixture and allow it to simmer for about 1–2 minutes until fragrant.
- Now that everything is cooked and aromatic, it’s time to assemble your zesty turkey zucchini bowls! Divide the turkey and sautéed veggie mixture into individual bowls. Finish with a sprinkle of fresh parsley and drizzle the garlic herb butter generously over the top.
